After a dull and wet May, we feel we deserve a decent June and summer just would not be summer without the occasional ice cream cone.

Marshfield Ice Cream, made at a farm in a village outside Bath, is world-famous.

Its delicious, creamy ice cream is like no other, it has no preservatives and it is literally in the cone just 24 hours after the cow is milked.

Now that is something.

Will and Dawn Hawking, who run Marshfield Farm, are passionate about sustainable farming and everything is delivered fresh with as little damage to the environment as possible.

They have vegan ice cream and they even have ice cream for dogs.

Their mouth watering flavours contain fruit grown locally here in the west country, the blackberry and clotted cream is a clear favourite of this correspondent, Irish cream liqueur a hot second and the caramel fudge in clotted cream is right up there.

Marshfield Ice Cream is on the menu in top London restaurants and is exported to all parts of the world.

Set on a farm in luscious countrysid, it is one of our best and favourite success stories.

Started 30 years ago on a farm in Marshfield it has grown into a household name, with wonderful flavours of ice cream all produced from cows on the farm.

The creamy ice cream is in almost every shop around the region, at every festival and huge events like the Bath & West Show when it is running.

Even at Glastonbury Festival, revellers take a breath from the festivities to restore their palate with a refreshing dollop of Marshfield ice cream.

Almost 30 different flavours of ice cream are produced, all in a converted cowshed on the farm.

At full capacity 2,500 litres of ice cream is made every hour – that is enough to fill 31 bathtubs.

It all began when Will Hawking’s parents first came to Marshfield Farm in 1971.

Times were hard, but they were young and enthusiastic.

Will’s father would milk their small dairy herd of 50 Friesian cows out in the field in a mobile milking parlour.

On cold mornings it would take him several hours just to defrost the pipes before milking could even begin.

By the time Will returned from agricultural college in the mid 1980s, the farm was pretty well established.

Will needed something to keep him busy on the farm, he had an idea.

The herd had doubled in size and there was plenty of fresh milk about, he had always loved ice cream.

When he was at school he set up his own ice cream business, selling ice creams to his friends, so he decided to combine his two life-long passions – farming and ice cream.

Will married Dawn in 1991 and together they ran the ice cream business as a hobby in their spare time.

When they were chosen to supply ice cream to The Pump Room in Bath, Will and Dawn’s hard work was given some real credibility and they realised that they had something special.

After a slow start and many years of hard work and long hours the farm has grown to nearly 1,000 acres of organically farmed land.

Today, more than 20 staff now helps the farm and ice cream businesses all run smoothly.
